Clémentines à la Mousse au Chocolat

A delightful dessert that combines the sweetness of clementines with the richness of chocolate, evoking warm memories and family gatherings.

Ingredients

  • 4 clementines
  • 200g dark chocolate
  • 3 eggs
  • 100ml heavy cream
  • 50g sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate by placing it in a heat-proof bowl over simmering water, stirring until smooth.
  2. Separate the eggs into whites and yolks in different bowls.
  3. Whisk the yolks with sugar and vanilla until pale and frothy.
  4. Combine the melted chocolate with the yolk mixture until fully incorporated.
  5. Whip the cream until soft peaks form.
  6. Beat the egg whites with a pinch of salt until stiff peaks form.
  7. Fold a spoonful of whipped cream into the chocolate mixture, then gently fold in the remaining cream and beaten egg whites.
  8. Add grated clementine zest and mix gently.
  9. Chill the mousse in the refrigerator for at least 2 hours.
  10. Serve with clementine segments and optional garnishes.

Notes

This mousse can be made ahead of time and stored in the refrigerator. Try adding mint or nuts for variations.
