Brown Butter Apple Blondies with Cinnamon Glaze

A cozy fall treat, these blondies are made with brown butter for a nutty richness and topped with a sweet cinnamon glaze.

  • 1 cup (225g) unsalted butter
  • 1 cup (200g) granulated sugar
  • ½ cup packed (110g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 medium apples (about 300g), peeled and diced
  • 1 teaspoon cinnamon
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons (30-45ml) whole milk
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Brown the butter in a medium-sized saucepan over medium heat by stirring constantly until golden brown and nutty, about 5-7 minutes.
  2. Mix the granulated sugar and brown sugar in a large mixing bowl, then pour the browned butter over the sugars and stir until glossy.
  3. Add the eggs, one at a time, mixing well after each addition, then add the vanilla extract and blend.
  4. Combine the flour, baking powder, salt, and cinnamon in another bowl, then gradually fold this dry mixture into the wet mixture until just combined.
  5. Fold in the diced apples until evenly distributed in the batter.
  6. Bake at 350°F (175°C) in a greased 9×13 inch baking dish for 25-30 minutes, until a toothpick comes out clean.
  7. Make the cinnamon glaze by mixing powdered sugar, milk, ground cinnamon, and vanilla extract until smooth, adjusting milk for desired consistency.
  8. Cool the blondies for 10-15 minutes before drizzling with cinnamon glaze.

Notes

For a vegan option, substitute eggs with flax eggs and use plant-based butter and milk.
