Avalanche Cookies

A delicious and nostalgic treat combining creamy peanut butter, fluffy marshmallows, and crunchy Rice Krispies, topped with white chocolate.

  • 2 cups white chocolate chips
  • 1 cup creamy peanut butter
  • 4 cups Rice Krispies cereal
  • 2 cups mini marshmallows
  • 1/2 cup milk chocolate chips (for topping)

Instructions

  1. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Mix in the creamy peanut butter until well combined.
  3. Combine the Rice Krispies in a large mixing bowl and pour the chocolate-peanut butter mix over it.
  4. Incorporate the mini marshmallows, folding them in carefully.
  5. Chill the mixture in the fridge for about 30 minutes to firm it up.
  6. Scoop and shape the mixture into balls, about 1.5 inches in diameter.
  7. Add the milk chocolate drizzle over each cookie.
  8. Let them set for about 20 minutes at room temperature.
  9. Enjoy your cookies with milk or coffee!

Notes

For variations, try using crunchy peanut butter or adding sprinkles for festive occasions!
