Apple Walnut Breakfast Cookies

  • 2 cups oats or flour
  • 1 cup chopped apples
  • 1/2 cup chopped walnuts
  • 2 eggs
  • 1/2 cup dairy (milk or yogurt)
  • 1 tsp cinnamon
  • 1/4 cup sweetener (honey or brown sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together your oats (or flour), chopped walnuts, and cinnamon in a large bowl.
  3. Chop your apples into small pieces and fold into the dry mixture.
  4. Whisk together the eggs and your choice of milk or yogurt in another bowl. Stir in your sweetener.
  5. Pour the wet mixture into the dry ingredients and mix until moistened.
  6. Scoop mounds of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 15-20 minutes, or until golden and firm to the touch.
  8. Cool on a wire rack for a few minutes before enjoying.
