Apple Pie Yogurt Parfaits

A delightful treat that combines the nostalgic flavors of homemade apple pie with creamy yogurt, perfect for breakfast or dessert.

  • 2 medium apples, diced
  • 1 cup oats or flour
  • 2 eggs
  • 1 cup dairy (yogurt or milk)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons sweetener (honey or sugar)
  • 1/2 cup granola or toppings of choice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the apples: Peel and dice the apples into bite-sized pieces and toss them with sweetener and cinnamon.
  3. Make the base mixture: In a bowl, whisk together eggs, yogurt (or milk), remaining sweetener, and nutmeg. If using oats, fold them in gently.
  4. Add the apples: Gently fold diced apples into your mixture.
  5. Bake it up! Pour the mixture into a baking dish and bake for 25-30 minutes.
  6. Cool down for about 10 minutes.
  7. Layer it up! Add layers of the baked mixture, yogurt, and granola in a glass or bowl.

These parfaits are best served fresh and can be stored in the fridge for 2-3 days.
