Apple Pie Cupcakes

Delightful cupcakes that combine the flavors of homemade apple pie with the fun of a cupcake.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup apple compote
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add in the eggs, one at a time, beating well after each addition.
  4. Mix in the vanilla extract and milk until combined.
  5. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Fold in the apple compote with a spatula.
  8. Scoop the batter into the lined muffin tin, filling each cupcake liner about 2/3 full.
  9. Bake the cupcakes in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  10. Prepare the cream cheese frosting by beating the softened cream cheese and powdered sugar until smooth.
  11. Frost each cooled cupcake with a generous dollop of cream cheese frosting.

Notes

Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
