Apple Pie Baked Oatmeal

A warm and comforting breakfast that combines the flavors of apple pie with wholesome oats, perfect for autumn.

  • 23 medium-sized apples, diced
  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk (dairy or plant-based)
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1/3 cup brown sugar or maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or oil.
  3. Mix the rolled oats, flour, cinnamon, nutmeg, and brown sugar in a large mixing bowl.
  4. Fold in the diced apples, ensuring they are coated with the dry mixture.
  5. Whisk the eggs in a separate bowl, then add the milk and mix well.
  6. Pour the wet mixture into the dry ingredients and stir until combined.
  7. Pour the mixture into your prepared baking dish and spread evenly.
  8. Bake for about 35-40 minutes, or until set and a toothpick comes out clean.
  9. Allow to cool for a few minutes before serving.

Notes

Serve warm with maple syrup or yogurt. Can be stored in the refrigerator for 4-5 days.
