Apple Maple Breakfast Quinoa

A cozy and hearty breakfast dish that combines quinoa, apples, maple syrup, and warm spices to kickstart your day.

  • 2 cups water or milk
  • 1 large apple, diced
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Rinse the quinoa under cold water in a fine-mesh sieve.
  2. Combine the rinsed quinoa and 2 cups of water or milk in a medium saucepan. Add a pinch of salt.
  3. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes.
  4. Sauté the diced apples in a skillet with a bit of oil or butter over medium heat for about 5 minutes.
  5. Beat the eggs with vanilla extract in a small bowl until well mixed.
  6. Add the cooked quinoa to the skillet with the apples. Stir to combine.
  7. Create a well in the center, pour in the beaten eggs, and stir gently for another 2-3 minutes.
  8. Drizzle the maple syrup over the mixture with nuts and raisins, and stir to heat through for another 1-2 minutes.
  9. Serve warm, topped with extra apple slices and a drizzle of maple syrup.
