Apple Cottage Cheese Toast

A delightful combination of sweet apples and creamy cottage cheese, perfect for breakfast or a light snack.

  • 2 medium-sized apples (preferably Fuji or Honeycrisp)
  • 1 cup oats or flour (for the toast base)
  • 2 large eggs
  • 1 cup cottage cheese (full-fat or low-fat)
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • 2 tbsp honey or sugar (adjust to taste)
  • Nuts (walnuts or pecans), yogurt, or extra honey for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Combine oats (or flour), eggs, and a pinch of salt in a bowl until you achieve a smooth batter.
  3. Spread the batter evenly onto the baking tray and bake for about 15 minutes or until lightly golden.
  4. Chop the apples into thin slices, then mix with cinnamon, nutmeg, and your chosen sweetener.
  5. Once your toast base is ready, spread a generous amount of cottage cheese over each piece, then pile the spiced apple slices on top.
  6. Sprinkle nuts on top for crunch or drizzle with honey for a sweeter finish.
  7. Slice and enjoy your toast!

Notes

For a vegan version, substitute eggs with flaxseed meal or applesauce and use plant-based alternatives for the cottage cheese.
