Apple Cinnamon Protein Pancakes

These protein-packed pancakes combine sweet apples and warm cinnamon for a cozy breakfast treat.

  • 2 medium apples (Fuji or Honeycrisp)
  • 1 cup oats or whole wheat flour
  • 2 large eggs
  • 1 cup milk or dairy-free alternative
  • 1 tablespoon cinnamon
  • 12 tablespoons sweetener (honey, maple syrup, or coconut sugar)

Instructions

  1. Prep the apples: Peel and dice your apples into bite-sized pieces, can squeeze lemon juice to prevent browning.
  2. Mix the dry ingredients: In a large bowl, combine oats/flour and cinnamon, whisk until blended.
  3. Combine the wet ingredients: In a separate bowl, whisk the eggs and milk, add sweetener if using.
  4. Bring it all together: Pour the wet mixture into the dry ingredients, stir until just combined; fold in chopped apples.
  5. Cook the pancakes: Preheat a skillet over medium heat, grease it, pour 1/4 cup batter for each pancake, cook until bubbles form, flip and cook until golden brown.
  6. Serve by stacking pancakes high and drizzling with maple syrup or yogurt, and sprinkle with cinnamon.
