Instructions

  1. Mix the dry ingredients in a large bowl: flour (or oats), baking powder, cinnamon, sugar, and salt.
  2. Prepare the wet ingredients in another bowl: beat the eggs, then add the milk and any sweeteners.
  3. Combine the wet ingredients with the dry mixture and stir gently until just combined.
  4. Fold in the diced apples carefully into the batter.
  5. Heat a griddle or skillet over medium heat and lightly grease.
  6. Cook each pancake by pouring ¼ cup of batter and cooking until bubbles form, then flip and cook until golden brown.
