The Ultimate Mexican Street Corn Dip

A creamy and flavorful dip inspired by traditional Mexican street corn, perfect for gatherings and snacks.

  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1/2 cup mayonnaise
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by gathering all items needed.
  2. Combine the softened cream cheese, sour cream, and mayonnaise in a large mixing bowl.
  3. Add in the corn and crumbled cotija. Mix thoroughly.
  4. Squeeze in the lime juice, and add cilantro and chili powder. Season with salt and pepper.
  5. Taste and adjust flavors as needed.
  6. Chill in the fridge for about 30 minutes (optional).
  7. Serve in your favorite dish, optionally garnished with extra cotija or cilantro.
