  • 4 Eggs
  • 1 lb Beef Sausage
  • 1/2 cup Milk
  • 2 tablespoons Flour
  • 2 tablespoons Butter
  • Salt to taste
  • Pepper to taste
  • Cheese (optional)

Instructions

  1. Preheat the oven according to the package instructions for your tater tots.
  2. Spread them out on a baking tray and let them crisp up.
  3. Add your beef sausage to a skillet over medium heat, breaking it into pieces as it cooks.
  4. Set the sausage aside but keep the fat in the pan.
  5. Melt butter in the same skillet, then whisk in flour to create a roux.
  6. Pour in milk gradually, whisking until smooth, and let it simmer until thickened.
  7. Season with salt and pepper to taste.
  8. In a separate pan, melt remaining butter and scramble the eggs.
  9. Assemble your bowl starting with tater tots, then add scrambled eggs and sausage, and drizzle gravy on top.
