  • 2 Bell Peppers (any color)
  • 1 Onion (sliced)
  • 1 cup Chicken Broth
  • 2 tsp Ground Cumin
  • 2 tsp Chili Powder
  • 1 tsp Garlic Powder
  • Salt & Pepper to taste

Instructions

  1. Prepare the Chicken: Begin by trimming any excess fat from your chicken breasts. You can dice them into cubes or leave them whole. Pop the chicken into the bottom of your slow cooker.
  2. Slice Your Vegetables: Slice your bell peppers and onion into even pieces.
  3. Layer the Veggies: Layer the sliced bell peppers and onion on top of the chicken.
  4. Season and Add Broth: In a bowl, whisk together the cumin, chili powder, garlic powder, salt, and pepper. Sprinkle this mix over the veggies and chicken, then pour the chicken broth over the mixture.
  5. Cook on Low: Cover your slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  6. Shred and Serve: Shred the chicken with two forks right in the slow cooker and give everything a gentle stir.
