  • 2 medium zucchinis, grated
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the zucchinis by grating them and squeezing out excess moisture.
  3. Mix the granulated sugar, brown sugar, and vegetable oil in a large mixing bowl until smooth.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Blend in the grated zucchini into the wet mixture.
  6. Combine the flour, baking soda, baking powder, cinnamon, and salt in a separate bowl.
  7. Combine the wet and dry ingredients, stirring until just combined.
  8. Add chocolate chips or nuts if using, and gently fold them in.
  9. Pour the batter into a greased 9×5-inch loaf pan.
  10. Bake for 50-60 minutes, or until a toothpick comes out clean.
  11. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
