These comforting Apple Oat Breakfast Bars are perfect for busy mornings or afternoon snacks, filled with hearty oats and juicy apples for a delicious and wholesome treat.

  • 2 cups oats
  • 2 apples, peeled and diced
  • 2 eggs
  • 1/2 cup milk or dairy alternative
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup honey or maple syrup
  • 1/2 cup flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish by greasing it or lining it with parchment paper.
  3. Mix the dry ingredients: oats, cinnamon, nutmeg, and flour (if using) in a large bowl.
  4. Combine the wet ingredients: whisk together the eggs, milk, and honey (or maple syrup) in a separate bowl.
  5. Fold in the diced apples to the wet mixture until well-coated.
  6. Combine the wet and dry ingredients, gently folding until just combined.
  7. Spread the mixture evenly into the prepared baking dish.
  8. Bake for 25-30 minutes or until golden around the edges and a toothpick comes out clean.
  9. Cool for 10-15 minutes, then slice into squares.

Notes

These bars can be made ahead of time and stored in an airtight container in the fridge for up to a week. They can also be frozen for longer storage.
