Crispy Roasted Kohlrabi Fries with Easy Spicy Sriracha Lime Dip

Delicious crispy kohlrabi fries paired with a spicy sriracha lime dip, perfect for snacking or as a side dish.

  • 2 medium kohlrabi bulbs
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika optional)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ½ cup mayonnaise (full-fat)
  • 2 tablespoons sriracha sauce
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 small clove garlic, minced
  • Pinch of salt, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the kohlrabi by peeling and slicing into fry-sized sticks.
  3. Coat the kohlrabi sticks with cornstarch, garlic powder, paprika, salt, and black pepper in a large bowl.
  4. Add olive oil and toss until the kohlrabi is evenly coated.
  5. Arrange the fries on a parchment-lined baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, flipping them halfway through.
  7. Prepare the spicy sriracha lime dip by mixing mayonnaise, sriracha, lime juice, minced garlic, and a pinch of salt in a bowl.
  8. Serve the crispy kohlrabi fries hot with the dip on the side.

Notes

For added flavor, serve with fresh herbs and lime wedges.
