Lemon Cheesecake Mousse

A light and airy dessert that combines the creamy richness of cheesecake with a refreshing burst of lemon.

Ingredients

  • 8 ounces Cream Cheese, softened
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Granulated Sugar
  • 1 tablespoon Lemon Zest
  • 1/4 cup Fresh Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Gelatin Powder

Instructions

  1. Prepare your cream cheese by letting it soften at room temperature for about 30 minutes.
  2. Mix the cream cheese and granulated sugar in a large mixing bowl until creamy and smooth.
  3. Add the lemon zest, lemon juice, and vanilla extract, and mix until well combined.
  4. Whip the heavy whipping cream in a separate bowl until soft peaks form, then gently fold it into the cream cheese mixture.
  5. Sprinkle the gelatin over a few tablespoons of cold water and let it bloom for 5 minutes, then warm it until dissolved.
  6. Stir the gelatin into the lemon mixture and mix well.
  7. Spoon the mousse into dessert glasses or bowls.
  8. Chill the mousse in the refrigerator for at least 2-4 hours before serving.

Notes

Top with whipped cream, lemon zest, fresh berries, or mint for a delightful presentation.
