250 g Flour
125 g Butter
1 Pinch of Salt
500 g Kohlrabi
200 g Crème fraîche
100 g Mascarpone
3 Eggs
200 g Ham or Smoked Tofu (optional)
Pepper (to taste)
Nutmeg (to taste)
Fresh Herbs (optional)
Instructions
Prepare the Crust: In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
Bring It Together: Gradually add cold water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
Preheat the Oven: Preheat your oven to 180°C (350°F).
Prep the Kohlrabi: Peel and slice the kohlrabi thinly.
Make the Filling: In a mixing bowl, whisk together the eggs, crème fraîche, mascarpone, pepper, nutmeg, and fresh herbs. Add your prepared kohlrabi and stir to combine.
Roll out the Dough: Once your dough has chilled, roll it out on a floured surface and transfer it into a greased pie dish.
Fill and Bake: Pour the filling into the crust and bake for 35-40 minutes, or until set and golden brown.

Feel free to customize with different vegetables or cheeses. This quiche can also be frozen for later use.
