Kohlrabi Quiche

A delicious and healthy kohlrabi quiche, perfect for a cozy meal.

  • 250 g Flour
  • 125 g Butter
  • 1 Pinch of Salt
  • 500 g Kohlrabi
  • 200 g Crème fraîche
  • 100 g Mascarpone
  • 3 Eggs
  • 200 g Ham or Smoked Tofu (optional)
  • Pepper (to taste)
  • Nutmeg (to taste)
  • Fresh Herbs (optional)

Instructions

  1. Prepare the Crust: In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Bring It Together: Gradually add cold water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  3. Preheat the Oven: Preheat your oven to 180°C (350°F).
  4. Prep the Kohlrabi: Peel and slice the kohlrabi thinly.
  5. Make the Filling: In a mixing bowl, whisk together the eggs, crème fraîche, mascarpone, pepper, nutmeg, and fresh herbs. Add your prepared kohlrabi and stir to combine.
  6. Roll out the Dough: Once your dough has chilled, roll it out on a floured surface and transfer it into a greased pie dish.
  7. Fill and Bake: Pour the filling into the crust and bake for 35-40 minutes, or until set and golden brown.

Notes

Feel free to customize with different vegetables or cheeses. This quiche can also be frozen for later use.
