Kohlrabi Carrot Fritters

Crispy and golden kohlrabi carrot fritters that embrace seasonal veggies, perfect for a comforting meal.

Ingredients

  • 1 cup grated kohlrabi
  • 1 cup grated carrots
  • 1/2 cup flour
  • 2 eggs
  • 1/4 cup grated cheese (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • Oil for frying

Instructions

  1. Prep your veggies by grating the kohlrabi and carrots using a box grater.
  2. Drain excess moisture by placing the grated veggies in a clean kitchen towel and squeezing.
  3. Combine ingredients in a mixing bowl: kohlrabi, carrots, flour, eggs, cheese, salt, pepper, and garlic powder.
  4. Heat oil in a skillet until shimmering.
  5. Form and fry by dropping spoonfuls into the oil, flattening to form patties.
  6. Drain excess oil on a paper towel-lined plate once golden brown.

Notes

Serve with a side of yogurt or dipping sauce. Can be baked as an alternative.
