Juicy Street Corn Pasta Salad

A vibrant pasta salad inspired by classic street corn, perfect for summer gatherings.

Ingredients

  • 8 oz rotini or penne pasta
  • 2 cups corn (fresh or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil a large pot of salted water, add pasta, and cook until al dente, about 8-10 minutes.
  2. Prepare the Corn: If using fresh corn, grill for about 10 minutes until lightly charred. If using canned, drain and rinse.
  3. Dice Your Veggies: Dice red bell pepper and red onion, halve cherry tomatoes, and chop cilantro.
  4. Drain the Pasta: Once cooked, drain and let cool.
  5. Mix the Dressing: Combine mayonnaise, lime juice, salt, and pepper in a large bowl and whisk until smooth.
  6. Combine Everything: Add cooled pasta to the bowl along with corn, veggies, and cilantro, then toss until coated.
  7. Chill and Serve: Refrigerate for at least 30 minutes before serving.

Notes

For a lighter version, swap mayonnaise with Greek yogurt or dairy-free mayo. Adjust seasoning to your taste.
