Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Whisk together the flour, baking powder, cinnamon, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet mixture, stirring just until combined.
  7. Scoop out small amounts of dough and roll them into balls, placing them on the prepared baking sheet.
  8. Fill each well in the cookies with about 1 teaspoon of peach preserves.
  9. Bake for about 12-15 minutes, or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack and dusting with powdered sugar.
