  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 onion, sliced
  • 2 cups mixed vegetables (like bell peppers and carrots)
  • Salt and pepper to taste
  • Cornstarch (optional for thickening)

Instructions

  1. Prep your chicken: Start by trimming any excess fat from the chicken thighs. Pat them dry and season with salt and pepper.
  2. Sauté the aromatics: In a skillet over medium heat, add oil and sauté the onion until translucent, about 5 minutes. Stir in garlic and ginger until fragrant.
  3. Gather the ingredients in the slow cooker: Add the sautéed onion mixture to the slow cooker, then place the chicken thighs on top.
  4. Mix up the sauce: In a bowl, whisk together bourbon, soy sauce, and brown sugar. Pour this over the chicken.
  5. Add the veggies: Toss in your mixed vegetables, spreading them evenly over the chicken.
  6. Set it and forget it: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  7. Thicken the sauce (optional): Remove chicken and vegetables after cooking, whisk in cornstarch slurry, and cook on high for 15 minutes.
  8. Return everything together: Toss the chicken back into the pot to coat in the thickened sauce.
