Slow Cooker Italian Wedding Soup

A cozy Italian Wedding Soup filled with savory meatballs, vibrant veggies, and comforting broth, simmered to perfection in a slow cooker.

  • 1 pound ground beef, pork, or chicken (for meatballs)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves minced garlic
  • Salt to taste
  • Pepper to taste
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup fresh spinach (or kale, Swiss chard)
  • 6 cups low-sodium chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 handful minced fresh parsley
  • 1 cup acini di pepe pasta (or orzo, ditalini)

Instructions

  1. Mix the meat: In a large bowl, combine ground meat, breadcrumbs, Parmesan, egg, minced garlic, salt, and pepper. Mix until just combined.
  2. Sear for flavor: In a skillet, add olive oil over medium heat and sear the meatballs for about 2-3 minutes until browned on all sides (optional).
  3. Layer your ingredients: In your slow cooker, add the meatballs, carrots, celery, and spinach.
  4. Pour in the broth: Add the broth, thyme, parsley, salt, and pepper.
  5. Cook on low for 5-6 hours or high for 3-4 hours.
  6. Add the pasta: About 30 minutes before serving, add the acini di pepe.
  7. Taste and adjust seasoning before serving.

Notes

Use low-sodium broth for better control over salt levels. This soup tastes even better the next day as the flavors meld.
