  • 1 cup diced potatoes
  • 1 cup diced onion
  • 1 cup diced bell peppers
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. Prep your ingredients: Start by chopping up all your veggies: the potatoes, onion, and bell peppers.
  2. Combine the ingredients: In your slow cooker, add the corn, diced potatoes, onion, bell peppers, and pour in the broth.
  3. Spice it up: Add salt and pepper to taste right here.
  4. Set it and forget it: Cover your slow cooker and set it to low for 360 minutes or high for about 240 minutes.
