Slow Cooker Cowboy Stew

A hearty and comforting cowboy stew filled with protein, veggies, and rich flavors, perfect for cozy evenings.

Ingredients

  • 1 pound protein (beef, chicken, or turkey)
  • 2 cups mixed vegetables (carrots, potatoes, corn, green beans)
  • 4 cups broth (beef or chicken)
  • 1 teaspoon dried herbs (thyme or oregano)
  • Salt and pepper to taste
  • Optional: 1 can of diced tomatoes
  • Optional: chili powder or hot sauce for spiciness

Instructions

  1. Prep your ingredients by chopping your veggies into even pieces.
  2. Brown the meat in a skillet if using beef, otherwise skip this step.
  3. Add the protein, mixed vegetables, and herbs to the slow cooker.
  4. Pour broth over the ingredients in the slow cooker and season.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. Taste test the stew and adjust seasonings as necessary.
  7. Serve the stew hot, garnished with fresh herbs if desired.
