Honey Lime Chicken & Avocado Rice Bowl

  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Prepare the marinade: In a bowl, whisk together honey, lime juice, lime zest, garlic, olive oil, soy sauce, salt, and pepper.
  2. Marinate the chicken: Place the chicken in a bag or dish, pour marinade over, and refrigerate for at least 30 minutes.
  3. Cook the rice: If not pre-cooked, prepare rice using your favorite method.
  4. Preheat the grill: Get the grill hot over medium-high heat.
  5. Cook the chicken: Grill for about 6-7 minutes per side, or until cooked through.
  6. Let it rest: Remove the chicken and let it rest for 5 minutes.
  7. Slice the chicken: Cut into strips or bite-sized pieces.
  8. Prepare the bowl: Start with a base of rice, layer on chicken, avocado, tomatoes, corn, onion, and cilantro.
  9. Add toppings: Drizzle yogurt or sour cream and sprinkle chili flakes.
  10. Enjoy: Dig in and savor the flavors!

Notes

For a vegan option, replace chicken with grilled tofu or tempeh. Adjust the spice levels with chili flakes according to your preference.
