High Protein Greek Pasta Salad

A vibrant and hearty Greek pasta salad packed with protein and Mediterranean flavors.

Ingredients

  • 16 oz pasta (Barilla Protein+ recommended)
  • 1 cucumber (peeled and sliced into 1/2-inch half-moons)
  • 1 pint tomatoes (cherry or grape)
  • 1 red bell pepper (seeded and diced into 1/2-inch pieces)
  • 1 yellow bell pepper
  • 1 red onion (thinly sliced)
  • 5 oz feta (crumbled)
  • 2 tbsp fresh dill, chopped
  • 2/3 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 lemon (freshly squeezed)
  • 1 tbsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add in the pasta and cook until al dente (8-10 minutes). Save a cup of pasta water before draining.
  2. Prep the veggies: Chop cucumber, tomatoes, bell peppers, and red onion.
  3. Make the dressing: Whisk together olive oil, red wine vinegar, lemon juice, oregano, garlic powder, salt, and pepper.
  4. Combine everything: In a large bowl, mix drained pasta, chopped veggies, feta, and dill. Pour dressing over and toss.
  5. Chill and serve: Let the salad chill in the fridge for at least 30 minutes before serving.

Notes

For a creamier texture, add a splash of reserved pasta water into the salad.
