Heaven on Earth Cake

  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup mini marshmallows
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)
  • Whipped cream for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cake batter: In a large mixing bowl, combine the vanilla cake mix, eggs, and water. Mix until well blended.
  3. Fold in the drained crushed pineapple into the batter.
  4. Pour the batter into a greased 9×13-inch baking dish.
  5. Bake for about 25-30 minutes or until a toothpick comes out clean.
  6. Cool the cake in the pan for 15 minutes before transferring it to a wire rack.
  7. Whip the heavy cream and powdered sugar until soft peaks form.
  8. Add mini marshmallows and shredded coconut to the whipped cream.
  9. Top the cooled cake with the whipped cream mixture.
  10. Chill the cake for at least an hour before serving.
  11. Serve with additional whipped cream if desired.
