Healthy Zucchini Oatmeal Cookies

Delicious and wholesome cookies made with zucchini and oats, offering a healthy treat that’s both enjoyable and easy to make.

Ingredients

  • 1 cup grated zucchini
  • 1 cup rolled oats
  • 1/2 cup almond flour or whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil or unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini and squeeze the excess moisture using a clean kitchen towel.
  3. Combine the grated zucchini, rolled oats, almond flour (or whole wheat flour), honey (or maple syrup), melted coconut oil (or butter), vanilla extract, baking powder, cinnamon, and salt in a large mixing bowl. Stir until well combined.
  4. Fold in chocolate chips or nuts, if using.
  5. Scoop rounded tablespoons of dough onto a lined baking sheet.
  6. Bake for about 12–15 minutes or until edges are golden.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Feel free to experiment with variations such as adding carrots or different spices for a unique twist.
