Healthy Salmon Quinoa Bowl

A delightful and nutritious bowl featuring salmon, quinoa, and fresh vegetables, inspired by childhood memories.

  • 2 salmon fillets
  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Rinse 1 cup of quinoa under cold water. Combine with 2 cups of vegetable broth in a medium saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet. Add the diced bell pepper, zucchini, and carrot, and sauté for about 5-7 minutes.
  3. Add the remaining tablespoon of olive oil to the skillet, season the salmon fillets, and cook skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  4. Scoop the fluffy quinoa into bowls, top with the sautéed vegetables and place the salmon in the center. Serve with a lemon wedge on the side.

Notes

For a creamy texture, consider adding avocado or hummus. Experiment with different vegetables based on what is seasonal.
