Healthy Chocolate Chip Zucchini Bread Oatmeal Cookies

  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda

  • 1/4 cup coconut oil, melted

  • 1 cup grated zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini using a box grater.
  3. Combine the rolled oats, whole wheat flour, baking soda, and salt in a large bowl.
  4. Whisk together melted coconut oil, honey (or maple syrup), and vanilla extract in another bowl.
  5. Pour the wet ingredients into the dry and stir until combined, then add zucchini and chocolate chips.
  6. Scoop spoonfuls of dough onto a lined baking sheet.
  7. Pop the baking sheet into the preheated oven and bake for 12-15 minutes.
  8. Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
