Apple Oatmeal Blender Muffins

Easy to whip up and packed with cozy flavors, these Apple Oatmeal Blender Muffins are a delightful twist on a classic favorite.

Ingredients

  • 2 cups oats or flour
  • 2 apples, peeled and chopped
  • 2 eggs
  • 1 cup milk (or dairy alternative)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the oats in your blender until they reach a flour-like consistency.
  3. Add the chopped apples, eggs, milk, cinnamon, nutmeg, honey or maple syrup, baking powder, and salt into the blender. Blend until well combined.
  4. Fill a muffin tin with liners and pour the batter evenly, filling about 2/3 full.
  5. Bake for 18-20 minutes until the tops are golden.
  6. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack.

Notes

These muffins are great on their own or paired with butter, Greek yogurt, or fresh fruit. They can be frozen for later enjoyment.
