Slow Cooker Taco Soup

A hearty and flavorful taco soup perfect for cozy evenings, made effortlessly in a slow cooker.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cups vegetable or chicken broth
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional Toppings: Shredded cheese, sour cream, avocado

Instructions

  1. Brown the meat in a skillet over medium heat, then transfer to the slow cooker.
  2. Chop the onion and bell pepper, and add them to the slow cooker with the beans, corn, diced tomatoes, and taco seasoning.
  3. Add the broth and stir well to combine.
  4. Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
  5. Taste the soup and adjust seasoning as needed before serving.
  6. Serve with optional toppings like cheese, sour cream, and avocado.
