Jack-O’-Lantern Cookie Cake

A whimsical Jack-O’-Lantern Cookie Cake that combines soft sugar cookie dough with sweet orange buttercream, perfect for Halloween celebrations.

  • 1 cup unsalted butter, softened
  • 1 ½ cups sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 12 tablespoons heavy cream (for frosting)
  • Orange food coloring (for frosting)
  • Black decorating icing (for decoration)

Instructions

  1. Prepare your sugar cookie dough by mixing flour, butter, sugar, egg, vanilla extract, baking soda, and salt.
  2. Shape the cookie by forming the dough into a pumpkin shape on a parchment-lined baking sheet.
  3. Bake in a preheated oven at 350°F (175°C) for 12-15 minutes until the edges are golden.
  4. Whip up the orange buttercream frosting by beating butter, powdered sugar, heavy cream, and food coloring.
  5. Decorate your cooled cookie cake with orange buttercream and create Jack-O’-Lantern faces using black icing.

Notes

For gluten-free, substitute all-purpose flour with a gluten-free blend. For dairy-free, use coconut oil instead of butter and almond milk for the frosting.
