  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 cups romaine lettuce (chopped)
  • 1/3 cup Parmesan cheese (shaved or grated)
  • 1 cup croutons
  • 1/2 cup Caesar dressing

Instructions

  1. Prepare Your Chicken: Preheat your grill or grill pan over medium-high heat. Drizzle chicken breasts with olive oil and season with salt and pepper. Let the chicken rest at room temperature for 15-20 minutes.
  2. Grill the Chicken: Place chicken on the grill and cook for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  3. Rest the Chicken: Remove from heat and let it rest for 5 minutes to allow juices to redistribute.
  4. Chop the Romaine: Chop romaine lettuce into bite-sized pieces and place in a large bowl.
  5. Slice the Chicken: After resting, slice the grilled chicken into strips.
  6. Assemble the Salad: Add sliced chicken on top of the romaine. Sprinkle with Parmesan cheese and croutons, drizzle with Caesar dressing, and toss gently.
  7. Plate and Serve: Divide among plates, optionally topping with more cheese and croutons. Serve immediately.

Notes

Customize by adding a spicy kick with red pepper flakes or using grilled shrimp instead of chicken.
