Refreshing Gluten-Free Watermelon Salad

A delightful summer salad featuring juicy watermelon, crisp cucumbers, tangy feta, and fresh mint.

Ingredients

  • 4 cups watermelon, cubed
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Start by cutting your watermelon into cubes.
  2. Grab your cucumber and chop it into small dice.
  3. If you’re using a block of feta, crumble it with your fingers or a fork.
  4. Take fresh mint leaves, stack them, and roll them like a cigar.
  5. In a large bowl, combine the watermelon, cucumber, feta, and mint.
  6. Drizzle with lime juice and gently toss the ingredients together.
  7. Now it’s time to season with salt and pepper to taste.

Notes

Add diced mango for a tropical twist or sprinkle jalapeños for a spicy kick. Leftovers can be used as a topping for grilled chicken or rice bowls.
