Gâteau Moelleux aux Poires Amandes et Chocolat

A decadent cake featuring ripe pears, rich dark chocolate, and nutty almond meal, perfect for cozy gatherings.

  • 4 ripe pears, peeled and sliced
  • 200g dark chocolate, chopped
  • 100g almond meal
  • 100g all-purpose flour
  • 150g sugar
  • 3 large eggs
  • 100g butter, melted
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F). Grease a round cake tin and line the bottom with parchment paper.
  2. Melt the chopped dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
  3. Combine the almond meal, all-purpose flour, baking powder, sugar, and a pinch of salt in another bowl.
  4. Whisk the eggs and vanilla extract in a separate bowl until frothy, then add the melted chocolate mixture and mix well.
  5. Fold the dry mixture into the wet mixture using a spatula carefully to keep it airy.
  6. Gently fold in the sliced pears, making sure they’re distributed evenly.
  7. Pour the batter into the prepared cake tin and arrange reserved pear slices on top if desired.
  8. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted comes out clean.
  9. Allow the cake to cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with whipped cream or vanilla ice cream for a delightful contrast.
