  • 100 Grams (1/2 Cup) Granulated Sugar
  • 100 Grams (1/2 Cup) Light Brown Sugar
  • 4 oz (1/2 Cup) Unsalted Butter, melted
  • 2 Large Eggs, at room temperature
  • 2 Teaspoons Pure Vanilla Extract
  • 1 1/2 Cups Shredded Zucchini, Packed
  • 1 Cup Chocolate Chips or Chunks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan with butter or non-stick spray.
  3. Mix together the flour, baking powder, baking soda, and salt in a large bowl.
  4. Combine the melted butter, granulated sugar, light brown sugar, and eggs in another bowl until fluffy.
  5. Incorporate the vanilla extract into the wet mixture.
  6. Stir in the shredded zucchini.
  7. Combine the dry and wet ingredients, folding gently until just incorporated.
  8. Add the chocolate chips or chunks and mix.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 55-65 minutes or until a toothpick inserted comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.
