  • 1 cup oats or flour
  • 2 eggs
  • 1/2 cup dairy (milk or yogurt)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup sweetener (honey or maple syrup)
  • 1/2 cup pumpkin puree
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: oats (or flour), cinnamon, nutmeg, and baking powder in a large bowl.
  3. Prepare the wet ingredients by whisking together eggs, pumpkin puree, diced apples, and dairy in another bowl.
  4. Combine the wet mixture into the dry ingredients and fold them gently using a spatula.
  5. Add the sweetener of choice and mix gently to blend.
  6. Scoop mounds of dough onto a parchment-lined baking sheet, leaving space between each cookie.
  7. Bake for 12-15 minutes until golden brown, keeping an eye after 12 minutes.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
