Extra Crispy Chicken Caesar Salad

A warm embrace on a plate featuring crispy chicken, fresh romaine, and a creamy homemade dressing.

  • 1 cup (240g) full fat Mayonnaise
  • ⅓ cup (30g) freshly grated Parmesan cheese
  • 2 Anchovy Fillets
  • 2 tablespoons Milk (preferably whole milk)
  • 1 Lemon, juice only
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 small clove of Garlic
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 2 Chicken Breasts (7-9oz/200-250g each)
  • 1 cup (65g) Panko Breadcrumbs
  • ¼ cup (40g) All-purpose Flour
  • 2 Eggs, beaten
  • 1 teaspoon Salt

Instructions

  1. Prepare the Dressing: In a mixing bowl, combine the mayonnaise, grated Parmesan cheese, anchovy fillets, milk, lemon juice, Dijon mustard, Worcestershire sauce, garlic, salt, and pepper. Whisk everything together until smooth and creamy.
  2. Prep the Chicken: Take your chicken breasts and pat them dry with paper towels. Season both sides with salt.
  3. Dredging Station: Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and the last with Panko breadcrumbs. Coat each chicken breast in flour, dip it in the beaten eggs, then coat with breadcrumbs.
  4. Cook the Chicken: Heat a skillet over medium-high heat and add enough oil to cover the bottom of your pan. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through.
  5. Prepare the Salad Base: While the chicken is cooking, wash and chop your romaine lettuce into bite-sized pieces and place it in a large bowl. Drizzle some dressing over the greens.
  6. Assemble the Dish: Once the chicken is cooked, slice it and place it on top of the dressed lettuce. Drizzle more dressing over the top and give it a gentle toss.
  7. Serve and Enjoy: Plate your salad with the chicken on top and an extra sprinkle of Parmesan.

Notes

Store the dressing in the refrigerator for up to a week. Keep the dressing separate until ready to serve for maximum crispness.
