Slow Cooker Beef Taco Bowls

A cozy and flavorful dish that brings the family together with delicious beef, fresh vegetables, and savory spices, all cooked in a slow cooker.

  • 1 lb ground or cubed beef
  • 12 bell peppers, chopped
  • 1 yellow onion, chopped
  • 23 cloves garlic, minced
  • 2 cups beef or vegetable broth
  • 23 tablespoons taco seasoning
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can black beans, rinsed and drained
  • Juice of 1 lime
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping the bell peppers and onion into bite-sized pieces. Mince the garlic.
  2. Brown the beef in a skillet over medium heat until fully cooked, then transfer to the slow cooker.
  3. Layer the chopped vegetables and minced garlic on top of the beef in the slow cooker.
  4. Add the broth and sprinkle with taco seasoning, stirring to combine.
  5. Toss in the corn and black beans.
  6. Squeeze in the lime juice.
  7. Cook on low for 6-8 hours or high for 3-4 hours.
  8. Serve over rice or quinoa, topped with cilantro and avocado, if desired.

Notes

This recipe can be easily customized. Consider adding diced tomatoes or cheese in the last 30 minutes of cooking for extra flavor.
