Juicy Peach Bread

A delightful peach bread recipe that captures the essence of summer with juicy pieces of peach in every slice.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups diced fresh peaches (or canned peaches, drained)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix together the flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
  3. Cream the melted butter and sugar in another bowl until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  5. Combine the dry mixture with the wet mixture gently until just combined.
  6. Add the diced peaches, folding them into the batter.
  7. Pour the batter into the prepared loaf pan and bake for 60–70 minutes, or until a toothpick comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

To add a nutty flavor, consider mixing in chopped walnuts or pecans. For a spiced version, add cardamom or a hint of clove.
