  • 4 eggs
  • 2 cups dairy (milk or non-dairy alternative)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup maple syrup or brown sugar
  • 1 cup pecans
  • Toppings of choice (e.g., powdered sugar, syrup)

Instructions

  1. Prep the apples by peeling and dicing them into bite-sized pieces.
  2. Whisk the wet ingredients in a mixing bowl: eggs, milk, maple syrup (or brown sugar), cinnamon, and nutmeg until well combined.
  3. Combine the diced apples, oats (or flour), and pecans in a large mixing bowl. Pour your wet mixture over the top and stir to combine thoroughly.
  4. Arrange the mixture in a greased 9×13 inch baking dish, pressing down slightly to ensure even distribution.
  5. Refrigerate the dish covered overnight.
  6. Bake in the morning at 350°F (175°C) for 45-55 minutes until golden brown and set in the center.
  7. Serve warm, drizzled with extra maple syrup and topped with powdered sugar or fresh berries.

Notes

Let the mixture sit for a few minutes before baking to allow the oats to soak.
