Double Chocolate Zucchini Bread

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. Mix the flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
  4. Beat the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla together in another bowl.
  5. Combine the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fold in the zucchini and chocolate chips until evenly distributed.
  7. Pour the batter into the greased loaf pan and spread evenly.
  8. Bake for 50–60 minutes, checking for doneness with a toothpick.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
