DASH-Friendly Strawberry-Rhubarb Pistachio Yogurt Bark

A refreshing and satisfying snack that’s tasty and healthy, made with Greek yogurt, strawberries, rhubarb, and pistachios.

Ingredients

  • 2 cups (454 g) Non-fat plain Greek yogurt
  • ⅓ cup (40 g) Shelled unsalted pistachios
  • 4 tsp (20 ml) Agave nectar (or honey)
  • 4 tsp (25 g) Low-sugar strawberry-rhubarb preserves
  • Zest of ½ a lime
  • ⅔ tsp Pure vanilla extract
  • ⅛ tsp Ground cardamom

Instructions

  1. Prepare your baking sheet by lining it with parchment paper.
  2. Mix the yogurt, agave nectar, vanilla extract, lime zest, and ground cardamom in a bowl.
  3. Spread the yogurt mixture evenly onto the prepared baking sheet.
  4. Swirl in the low-sugar strawberry-rhubarb preserves gently with a skewer or knife.
  5. Sprinkle the shelled pistachios evenly over the yogurt mixture.
  6. Freeze the baking sheet for 4-6 hours until fully set.
  7. Break the bark into large pieces after letting it sit at room temperature for 5-10 minutes.
  8. Serve the yogurt bark chilled on a platter.

Notes

Best prepared a day in advance; can be stored in an airtight container in the freezer for up to a month. Option to top with fresh fruits or honey before serving.
