  • 1 cup Crozets (Savoyard pasta)
  • 1 tablespoon Salt
  • 45 cups Water
  • 2 tablespoons Butter
  • 1 cup Grated cheese (such as Gruyère or Emmental)
  • Fresh herbs (optional, such as parsley or chives)

Instructions

  1. Boil the water: In a large pot, bring about 4-5 cups of water to a rolling boil. Add a generous tablespoon of salt.
  2. Add the crozets: Pour in 1 cup of crozets, stirring gently to prevent sticking. Set a timer for about 12 minutes.
  3. Check for doneness: When the timer buzzes, taste for tenderness.
  4. Drain and reserve water: Once cooked, drain the crozets in a colander, reserving about a cup of pasta water.
  5. Melt the butter: In the same pot, add 2 tablespoons of butter over low heat and melt it.
  6. Add cheese: Sprinkle in 1 cup of grated cheese and stir gently, adding reserved pasta water if needed.
  7. Herb it up: Toss in chopped fresh herbs if desired.
  8. Serve and enjoy: Transfer the crozets to warm bowls and garnish as desired.

Notes

For extra creaminess, add a splash of heavy cream or crème fraîche. Crozets can be customized with various vegetables or cheese alternatives.
