Roasted Kohlrabi with Parmesan

A cozy and comforting roasted kohlrabi dish topped with Parmesan cheese, perfect for impressing family and bringing rustic charm to your dinner table.

Ingredients

  • 2 kohlrabi, peeled and cut into cubes
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the kohlrabi by peeling and cutting it into roughly 1-inch cubes.
  3. Toss the kohlrabi cubes with olive oil in a large bowl until coated.
  4. Season with salt and pepper, and toss again to combine.
  5. Roast in a single layer on a baking sheet for about 25-30 minutes, tossing halfway through.
  6. Add the grated Parmesan cheese during the last 5 minutes of roasting.
  7. Garnish with fresh parsley and serve warm.

Notes

For a dairy-free option, substitute nutritional yeast for Parmesan. Consider variations with herbs, spicy ingredients, or nutty additions for different flavor profiles.
