Oven Roasted Zucchini

A simple and delicious oven roasted zucchini recipe that brings warmth and comfort to your table.

Ingredients

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the zucchini under cool water and pat them dry. Trim off the ends, then slice them into ½-inch thick rounds.
  3. Toss the sliced zucchini with olive oil, salt, black pepper, and garlic powder in a large bowl.
  4. Spread the zucchini in a single layer on a baking sheet and roast for about 15-20 minutes, flipping halfway through.
  5. Sprinkle the roasted zucchini with grated Parmesan cheese and return to the oven for an additional 2-3 minutes.
  6. Remove the zucchini from the oven and garnish with fresh parsley.
