Crispy Low Carb Baked Kohlrabi Fries

  • 3 medium-sized kohlrabi
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the kohlrabi using a vegetable peeler, then cut it into thin strips about 1/4 inch wide.
  3. Toss the kohlrabi strips with olive oil, kosher salt, garlic powder, onion powder, smoked paprika, and ground black pepper.
  4. Line a baking sheet with parchment paper and spread the seasoned kohlrabi strips in a single layer.
  5. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  6. Cool for a few minutes before serving hot.

Notes

Kohlrabi fries are great for meal prepping and can be stored in an airtight container for up to 4 days. To reheat, bake at 375°F (190°C) for 5-10 minutes.
